Peanut Butter & Jam Cookie

 This cookie is not from any specific country or region, though PB & jam sandwich is a popular snack in North America. I spent this winter training for a bike trip in late winter (on the other side of the world where it's summer..), and have eaten more PB & jam sandwiches than I'd like to admit. 

For these cookies, I rolled the dough in pecan pieces and Balinese salted peanuts, and filled the middle with raspberry jam. The salt and sweet go so well together. It's crunchy outside, and jammy inside. Like yin and yang, the contrast of taste and texture compliments each other.

I followed Megan's recipe from Olives and Thyme with a few minor tweaks.
